Chocolate avocado smoothie

This is seriously so freaking good you would never know it was actually healthy. I had this for a desert last night. It tastes just like a real chocolate milkshake that I used to love so much as a child, without the nastiness of dairy and sugar. It’s a great way to use up a ripe avocado that will otherwise go bad. Avocados are a regular staple in my diet. I have one almost every day.

While avocados have a high caloric count (one avocado is 320 calories), the various nutrients and “healthy” fats make it a must-eat. Some call the avocado the alphabet fruit because of all the vitamins it contains. One avocado provides your body with vitamins A, C, E, K and B6, along with an enormous amount of potassium and “healthy” fat. Perhaps the biggest health benefit of avocados is that by adding avocado to certain foods, you can improve your absorption of nutrients. This means that when you combine other fat burning foods with avocado, you can improve your nutrient absorption up to 400%! Avocados can also reduce the signs of aging, regulate blood sugar and improve eye health.

Ingredients:

Makes 2 – 2 cup servings

1 ripe avocado, halved and pitted
2 cups of homemade almond milk ( or bought, homemade is better!)
3 tablespoons of unsweetened cocoa powder
3 tablespoons of maple syrup or honey
2 tablespoons of dark chocolate chips
1 tablespoon of vanilla extract
14 ice cubes

Directions:

Into your blender or Vitamix, add all of the ingredients.  Blend until creamy.  This will have a thick, pudding like appearance.  Pour slowly into  your glasses.  Top with a few chocolate chips.  Enjoy!
