My friend Maia came up with this butternut squash recipe that looks soooo yummy I decided to post it. Maia has been an inspiration to me and even came up with the name RAWnewal. Thanks Maia! Recipe follows…
2 medium sized b nut squash, cut in half and baked at 350 for 40-50 minutes
Let the squash cool while cooking a med sized onion in coconut oil until clear and soft
When the squash is cool, cut off the skins and cube most of it
Now put some of the squash into the blender with 1 can of coconut milk and 2-3 cups of water
Put every thing into the big pot with the onions and heat it up…..add water as needed
Next is the curry powder….I guess that I put in about 2 tablespoons or so…..as you like
Add frozen or fresh spinach for a green and orange tasty delight!
ENJOY…..IT FEELS SOOOOO GOOD GOING DOWN!
